The big issue is not getting your kid fiber they want, but to work on their picky eating problem. Unless your child has allergies, letting them be picky will cause a lot of issues and usually comes from parents that facilitate their pickyness.

By the time they are a toddler the habits are pretty ingrained, but you need to start making your child eat the food you make for them, not just what they want. A restricted diet just leads to health issues. A toddler should be eating about the same food as their parents, stop making them their own food if they don't like what you are having. Give them a reasonable portion, and don't let them up from the table until they clear their plate. If they fight or insist upon getting up, there are a few things you can do.

You can let them up, but take their food away. They had a chance at dinner and didn't want it, so they can wait until you serve them breakfast to eat. Or, you can put the plate of food in the fridge, and when they get hungry later they can finish it. Don't be afraid to eat dessert, and when they ask for some tell them they don't get any until they finish their food. Never make them something different, they will eat when they get hungry.

Since you didn't make them eat a rounded diet and catered to them before it might take a while before you can have them eat a balanced meal without fighting, but eventually they will eat a more rounded meal. They may not always like it, but it's very important to teach your children that life isn't about getting what they want all the time.

Get some cookie cutters, and slice carrots into slabs, then cut the slabs with cookie cutters for star shapes, etc.

Raisins mixed with peanuts (if you are supervising the kid during snack time) and chocolate chips or M&Ms.

Try putting out a bowl of steamed veggies and just leave it on the table while watching TV or something. I'm very surprised to see my kids snacking on steamed spinach while watching TV.

Popcorn.

Celery sticks by themselves, or filled with peanut butter or cream cheese. Can add raisins as decorations.

Make eating the food a game. Girls often like decorating with their food, while boys are often interested in bulldozing the food, "cleaning up the construction site," etc. (-: Of course, if one idea doesn't work, don't be afraid to cross gender barriers!

Frosted Mini wheats as a snack with no milk. My kids snack on cereal alot with no milk. Just a baggy of it.

if your kid is picky, put the food in front of them, when they get hungry enough, they will eat it regardless, this will also break their bad eating habit.

how about setting bits of fruits like apple, grapes, banana etc in jelly. my son just loves it. you can also grate or mash veggies and put them in pan cake batter or in omlet.
