The form of rock wall building you speak of has been used long before the USA was born. The ancient Hawaiians, and other Polyneasians did not have concrete, or cement. But some of the ancient wall still stand today after hundreds of years. They are strong, and are beautiful, made of lava rock. Today, only a few can do it correctly, but the wall you saw, will last forever.

I think of a wall made of stone. When they built them years ago, they fit the stones so closely together that no cement was needed. And a lot of those walls are still standing.

Well, the 'wall' probably is , made of lumber, cloth, water poured from a specially designed thing to create a 'wall' effect,a group of people standing in a line plus one on top of each one, boxes stacked up tall enough to be a wall etc.

Cement (Concrete) are not the only building materials available. Igloos, adobes, and wood frame houses do very well without cement.
