my freind says that there is no right way to make enchiladas.

but i never heard of mole. i heard of chile verde and chile rojo, but does this exist?

I've made mole enchiladas with leftover shredded turkey and they are excellent. Make mole sauce using your favorite recipe, shred leftover turkey and warm corn tortillas. Put some turkey, mole and Monterrey jack cheese in each tortilla and roll up. Place in a baking pan, seam side down. Once all your enchiladas are rolled, top them with more mole sauce and cheese. Bake in the oven about 20 minutes until warmed through and cheese is melted.

Yep these definitely do exist. I actually got them at a local restaurant the other day. It's an enchilada with any variety of fillings (meat, cheese, veggies, etc). But instead of a cheese, tomato, or meat sauce; it comes with a very dark deeply flavored sauce. It is flavored with cocoa, almonds, dried chili peppers, cinnamon, and just a touch of sugar. Of coarse this is just one version of mole. This interesting and possibly unusual list of ingredients creates a very complex flavor. I really enjoy dishes made with mole sauce. You should try it!

Mole is a traditional Central American sauce made in many versions but most contain roasted chiles, pumpkin seeds and unsweetened chocolate as well as a complex mix of other herbs and spices. It's delightful.

Mole' is a real sauce from Oaxaca, Mexico. Are you asking if mole' is real or if enchilada with mole' sauce is real?

i believe it has more of a chocolate/dark taste.
