I used to volunteer at an LDS family history center (and am not LDS, so I was a bit of a curiousity.. good people).
All of the family files there are submitted by family members. No different from anything you find online now... the quality is dependent on the person doing the research. I worked with persons who came in to do their research, as a part of their church process, but were not always enthusiastic.
One feature that is broader than the submitted files, is the fact that the Church spent YEARS going across country, to film all possible records. These are original records... not secondary. It includes things like land records that you seldom find online but are EXTREMELY valuable.
The films are "rented", but it is a reasonable fee per film... used to be like $3 for a 2 week loan. Compared to the cost of physically going to a court house, out of state, it was quite a bargain to me. This was back pre internet, and that is how research was done.

familysearch.org is not only mormon genalogoy. It has some of the most comprehensive records from around the world.
