Thats a good question and I dont know the exact answer. I would assume it has something to do with the cost of having the cars and building engines and all the time and effort and money that goes into each car.

Teams have been a part of NASCAR since the 1960's.
Holman-Moody was a pioneer in the multiple team concept.

Holman-Moody entered two 1958 Fords at the last two races on the beach at Daytona. The same two cars, one driven by Curtis Turner and the other driven by Joe Weatherly, raced to first and third in one race and second and fourth in another.

The Petty's have run multiple car teams for years. So did Junior Johnson in the 70's.

The sport is so tough to win in, that sponsors tend to go with proven winning car owners.

One of the biggest reasons is for testing purposes. The teams are only allowed so many test, but if you have multiple teams, they can test at the majority of the tracks and share the information. Plus, these days, it is very hard for a single owned car to survive in NASCAR. The teams are so dominant.

Economics.More teams more money .
To build 3 team cars a team puts out x amount of money.some times 3 cars are cheaper each than a single car to build.More cars on the track gives the owner a better payday.

Something Nascar has allowed to ruin the sport IMO. Never used to be that way. Sad the only way drivers can win titles anymore is to have team. Any title won now a day is tainted.
