Pasta is a good and easy meal to make. Be sure to follow the directions on the package for cooking times for whatever pasta you have. If you have a box or two of macaroni and cheese mix (pasta and sauce mix in a box) look at the directions on that and see if it looks like something you can do. If so, cut up one or two hot dogs per person and throw those in to boil with the pasta. It doesn't change the cooking time. Do everything else as stated on the package.

Another fun variation on mac and cheese is to make the mac and cheese as directed on the box, then -- just when you've already mixed in the cheese sauce and you're almost ready to dish it up -- stir in a can of chili (one can per box of mac and cheese) and let that heat through for a minute or two. That's really good and different, too.

If you have salad fixings on hand, whip up a quick salad to go with it. Otherwise, find a veggie you all like and serve that with it.

Pasta is easy (whatever you do, don't boil it for half an hour though - more like 8 to 10 minutes) and you can be creative with it, but if you're truly not confident about your cooking skills, try a salad. If you've got time to shop, most grocery stores sell pre-cooked meat you can add so there isn't any cooking involved aside from cutting and chopping your mother's favorite vegetables and using her favorite salad dressing. If you want to go the extra mile for mother's day, make the dressing from scratch - it's likely less expensive and certainly better.

The website www.epicurious.com has a great search engine and tons of salad and salad dressing recipes (not to mention other mother's day ideas).

Good luck!
