I dont think they choose to.I think they have a tendency to think irrationally,have a need to believe fervently,are generally unstable individuals who latch onto religion as a crutch.These types can be molded into some pretty scary forms by anyone with the ability and desire to do so

Many people like things to be simple and certain. Fundamentalists like to believe in a literal interpretation of the Bible, because this is a simplistic approach to the Word. I find it interesting that fundamentalists do not believe in transubstantiation.
With simplistic interpretation of the Word, fundamentalists like to paint a very narrow picture of who will and will not receive the gift of salvation. This provides them with some level of certainty, albeit only in their own minds.
This simplistic approach to Christianity does not require thought or even effort, as fundamentalists for some reason do not believe in "good works".

It is a desire for certainty. You may occasionally hear a believer say "I don't believe, I KNOW." A fundamentalist redefines his beliefs as "fact" in order to eliminate doubt. He doesn't want to experience "truth" so much as to possess it. This impression of certainty is so strong that it becomes nearly impossible for a fundamentalist to leave his faith, even amid serious doubts, because of the fear of loss of salvation.

The problem with your question is that there are many groups that would call themselves fundamentalists or that would be called fundamentalists but of which all have very different belief systems. Therefore your question can not be answered in its present form

They DON'T for the most part. They are indoctrinated into the 'part' from as young an age as other fundies can mange to get to them at. With the use of many classic cult tactics (constant repitition (e.g. prayers), denial of fundamental/biological desires (e.g. all unmarried and/or non-procreative sex is heavily discouraged, fasting), etc.) which are especially effective on young, developing, impressionable minds, these innocent people are gradually made 'dumb and dependent.' They are left like children, with no ability to approach life nor make decisions without the guidance of their church and/or consulting their holy book.
It is no easy task to undo all of that damage, that's for sure. :/

they happen to believe that the Bible is the inerrant word of God and that it ought to be taken at least somewhat literally. That just happens to be what they believe, and that makes them a Fundamentalist.

I am a sinner saved by grace. It was grace which saved me and it is grace that has brought me this far.
God in His grace opened my eyes to see that the Bible was the Word of God. That every book logically flowed together. That the Bible is not just one man's testimony, it is not even one book. It's a God given collection of books spanning thousands of years of history. Rich and poor, kings and shepherds giving the same testimony of the truth.

Jesus said " You have not chosen me, but I have chosen you.." So really, we are responding to God's choice of us.
But in this time God is drawing everyone who will:
We are drawn in by the Holy Spirit - "If I be lifted up, I will draw all men unto myself" - Jesus Christ
And we are kept by the power of God through faith.
1Pe 1:5 Who are kept by the power of God through faith unto salvation ready to be revealed in the last time.
