There are basic catapults and the more high-fangled trebucets. The latter was able to toss a hundred pound stone over 400 yards, but took an awful lot of work to put together.

The basic part of the catapult is a piece of wood that is able to bend without splitting. This can be put into a vertical collar on a platform and bent back. At the point where the piece is horizontal, you can place a fixed cup into which fits the missle you wish to deliver. At the end of the piece you can put in a hook. On the platform immediately below this hook, you put another hook. You can tie a rope to one hook and hold the catapult in place by tying a non-slip knot on the other end such as a tautline hitch (hire a boy scout for this). Then insert missle, say a prayer, and cut the rope.
