It's not just French Canadians, it's francophones in general. Why? Maybe it has to do with frog legs as being part of French cuisine. It was probably a derogatory term started by the British, as France and England were often at war with each other. The Brits are famous for their lack of cuisine, so something like frog legs would be seen as disgusting.

I don't think it's specific to French Canadians, it's more for French people, and by extension French speakers. It comes from the fact that French people eat frog legs.
Well, it's only one dish and most French people never even had it, but somehow it stuck.

This is another racist term. It is derived from the fact that frogs legs are eaten in France.
Each country's citizens are given such names by the deep thinking citizens of other countries. Other examples of "food names" are limies and krauts.
