Which software from the above would you suggest for photo manipulation? I would rather a user friendly interface instead of multiple but difficult to learn capabilities.

Actually, you might consider a third one:

Quite powerful and gets better with each new release.

I use Photoshop, GIMP and this relative newcomer on a regular basis. Paint.Net is free and has a VERY friendly user interface. Some of the things, like transparent palettes when not in use, are very useful.

CHeers!

You could always copy+paste. GIMP also allows for you to open images as layers, which works very well. Say you have two pictures on your desktop, Pix 1 and Pix 2. You want to put part of Pix 2 onto Pix 1 . Open up Pix 1 with GIMP. Then click File-Open As Layers in the toolbar at the top. You will be able to browse your computer for another image. Choose Pix 2 and click open. This will open the second image on top of the first image in the same window. Then you can move it around, erase, or do whatever. On (usually) the right hand side of the screen there will be a Layers window that allows you to choose which layer you want to edit. You can move them up and down depending on which image you want on "top". I hope this was comprehensive enough. I provided some screen shots of what it might look like (Mac OS X).

Here are several, completely free programs for image manipulation, and all are more user friendly than the Gimp.
Try them all to see which you like best.

Both are very good graphics editors My preference is Photoshop, but it's a bit on the spendy side where as Gimp is free.
