Thumbs up to the smaller pan. Go with an 8x8 instead of the 9x13 it probably calls for. I don't like a thin, dry brownie either and always use my 8x8 instead. The brownies come out thick and moist :) but not cake like in anyway.
I know this one doesn't help today but for next time. Buy a package of Baker's brand unsweetened chocolate squares (small orange package in baking aisle near choc chips). They have a One Bowl Brownie recipe that is very good. It also calls for a 9x13 but go with the 8x8 for this one too. It is an excellent recipe (throw some chocolate chips and walnuts into the batter).

I always add chocolate syrup to them along with choc.chips or m&m's nuts ...But when cooking I always take them out about 5 minutes sooner than called for. That way they don't get over done. They will keep baking after you take them out of the oven a lot of times if the pan stays hot.I am the Brownie lady at work the guys love them. Don't forget to frosting them too. That helps with the chewiness.

You might be using too big a pan so the mix spreads out too thin. Use a smaller pan so the brownies aren't so shallow.

The best boxed brownie mix is Ghiardelli's.

Add a little bit more vegetable oil in the mix, and don't cook them for as long. Take them out about 5-8 minutes too early, and they won't be so crispy. They'll be nice and soft.

Cheers

Don't cook them as long...remember that they will continue to cook after you take them out of the oven until they cool down. Take them out 5 minutes or so earlier.

about 3/4 thru cooking take them out and drop them from about 6-8 inches from the counter or floor

this compresses the mix so it is harder to get dried out and turn crispy
