You head for an Amish community, live there, befriend Amish people and become part of their community. You cannot be Amish unless you are living among Amish.

Read up. There are many opportunities for a person to spend a week or two on an Amish farm, or to work for an Amish business, particularly if you live in close proximity to an Amish community.
The Amish are wary of groupies...as well they should be.

the easiest way is to meet an amish woman by moving into the community and start going to their church. you can either marry the amish farmers daughter or take an oath. I think you would do well since you are most def plain.
