how do images of animals differ between indian art & chinese art?

Not sure whether you mean Native American "Indian" art or India "Indian."
Native Americans used images of animals as part of the narrative of the visual history they were drawing/painting. They served as symbols for nature spirits and for the fruits of Mother Earth. Their religions meant for people to live in harmony with nature and taught them to not over harvest or hunt.
The early Chinese had similar ideas about living in harmony with nature, but they took a broader view of animals. They could be the manifestation of spirits for good or evil. They could be appreciated for the traits associated with them--majesty of lions, humor of monkeys, and so on.
