Since brunch is sort of a combination of breakfast and lunch, you can get away with preparing a number of foods. Waffles, omelets, assortment of fruits, finger sandwiches, bagels, french toast, muffins, juice, tea/coffee etc. The sky is the limit here. You'll have to decide what you feel your guests will enjoy and is the easiest for you to prepare in the shortest amount of time. Something that most everyone likes. Pancakes, Eggs, or omelet. Bacon, sausage. Dont limit yourself to one thing.....its brunch, not a main course meal.

This is a light fresh Italian dish my italian boyfriend loves..Good for hot days..
dice sime tomatoes add to bowl
add leaf of basil
salt
a little oregano to bring out the tomatoe flavor
olive oil
i can of tuna (in or not in oil)
Boil favorite pasta
drain
add to bowl
mix
serve
We love it!!!

All you need to serve is a good Quiche. Spinach, mushroom and tomatoe is very good. Have a fruit salad on the side.
