but there is no hubcap!! any ideas as to what that might be?

Paul h has the better answer. You said its the rear wheel. It would be easier to hear on the front wheels, especially when you turn. There is an easy way to find out though. First ensure that the lugs are tight, then jack up the truck under that wheel, pull the tire by the rim( not too hard, you don't want to knock the jack over) then push it away form you if there is any movement or it feels not quite tight as it should be then you probably have some bad bearings. I bet there some big dumb guy at your job who thinks you're cute enough to do it for you.

Bad wheel bearing or stones in the hubcap. Oops, you said that already...go with the bearing thingy being bad.

Check the lug nuts (see if they are tight). A louder noise might mean the brake shoes are cracking. Good Luck.
