If you are at the max and you delete one song, can you add another because of the deleted one or not?

Simply yes, if you are maxed out and you delete a song the song that you put in its place cant be longer then the song you deleted. However it really isnt 240 straight songs that you can put on the player. That number is based on the amount of memory on the player divided by whatever the manufacturer wants to say is the average size of a song. Its reallly all about the size of the songs (length, quality, etc)

240 songs is a generic limit based on an average file size. If you are adding smaller files (lower bit rate or just short songs) then you could fit way more than 240.

It makes more sense to look at it in terms of the megabytes that the audio is taking up rather than the arbitrary song number they come up with.

Simple answer, YES.
If all the memory is used and you free up some memory by deleting a track or two then you can of course add more music.
iTunes will let you know the status of your 'pod.

As long as it's the same size or smaller that the one you deleted, you can.
