Many of them did to a greater or lesser degree, when they could, but, for the most part, they were segregated and kept sepparate - in order to assimilate, they had to give up the open practice of thier religion, and pass for another ethnicity. Many probably did, and there are probably many people who have no idea they have some jewish ancestry, as a result.

Jews were never expelled from the areas you mention - many left voluntarily after the foundation of Israel, and many stayed behind, and, yes many assimilated to the degree they could without actually abandoning thier religion. Jews /were/ expelled from Arab countries after the formation of Israel, however.
