Big cheese fan here. I have a prticular favourite among the Cheddars, which is Isle of bute - strong, crumbly, but still melts well. Also enjoy a nice chunk of Caerphilly in that whole "crackers, grapes, crisp white white" scenario. Smoked Applewood's quite good fun too, in things like Mexican, or, logically enough, with an apple compliment.
Dang...just popping to the fridge...

I love blue cheese and Parmesan too, why not find your local cheese specialist and try some of their cheeses, most people don't realise the UK make a lot of lovely cheese, many different variates !!

I like all cheese and am now sitting here with a pick n mix selection Jacobs crakers and butter plus a bottle of red wine to enjoy the evening with!:-)
But I'd say Mature Cheddar(with pickle) is my fav in Sandwiches!!
