Because buying/building a hotrod back in the day DID NOT mean that you go to the honda dealer and spend 6 hours a day on jegs or summit racing buying shifter knobs, stickers and soupcan mufflers. An older rod is not a hobby, its a lifestyle. You could spend a thousand man hours on the body to get to primer then another 10 grand on driveline-but it'll run like a scalded ape and sound like a lion ( not the end of the mexican food buffet) and have your blood sweat and tears in it.

the main reason is LABOR and other problem is custom made parts. unlike manufactures use robot, HOT ROD use man labor which takes a long time.

Because the people that are buying them aren't old enough to realize how bad they were when they were new. That's called "nostalgia" and if you want to pay for it, suit yourself. What I appreciate is the modern computer controlled, fuel injected automobile. Best thing since sliced bread!
