I saw an article about Maureen McCormick and her new body and weight loss but on the show she is still fat. Is there a reason for putting the shows out after the weight loss success?

Not a specific reason: the show is pre-taped. Each Fit Club Weigh-In occurs after a week or two of diet and exercise, but it is not "live" the way "Big Brother" is live. It is like all the other reality shows ("Survivor," "Amazing Race," etc) where they filmed the show months ago, and VH1 just decided to put it on their spring rotation for ratings reasons.

The interviews Maureen is doing now is to promote the season on VH1. I think it's great that she's able to keep the weight off and show off herself, her success, and the success of the show.

as with all shows, they tape the shows then they air them according to when the network has room in the line-up

It's because they are pre-taped months in advance. I'm sorry but, DUH!
