That will be stated in your contract, read it.
If you are talking private party, you may be able to recover your deposit in a small claims action.
When I sell a bike ( private party) I put on the deposit reciept " Non-Refundable Deposit" which I am allowed to do. The premise being ,while I held the bike for you, I lost out on an undetermined amount of potential sales.

If this bike has been special ordered or you have had additional equipment added and then changed your mind you may have to still pay for the labor costs. Most likely you will be charged a restocking fee. You may get lucky and not have to pay anything it all has to do with what your contract says and how the dealer is going to react. Be advised, they do not want to lose the sale and may convince you that the charges will exceed the down payment. In some states you have a three day period to change your mind without incurring any costs. You may even have to seek legal advice if you two can not come to some agreement.

See what the sellers policy is. If you ordered the bike, they may keep a percentage. Or, they may try to talk you into store credit. If you do not wanna buy the bike from there, do everything to get your cash back.
