Fried egg sandwiches are mighty tasty. Begin by frying your egg over-easy. Take two slices of bread and spread mayonaise on both slices. Place your cooked egg on one bread slice, slap the other on top of the second slice and voila! You have yourself a fried egg sandwich. The trick is to cook your egg a little longer so the yolk doesn't burst all over your fingers when you're eating.

If you want to dress up your sandwich a bit, you could include some sliced meat (eg: ham or roast beef) and replace the mayo on one bread slice with cheese whiz.

I like scrambled with cheese and sprinkle some good ole hot sauce on them. Then I like the hard boiled eggs but I cut them in halves and make deviled eggs.

Either scrambled with cheese or an omelet with cheese, ham, onions and bell peppers...sometimes mushrooms. I eat it both ways with buttermilk biscuits always and never toast.
