I don't want to live in a city where it's super hot. I like cold atmosphere and not so much of sun. Which is the best for me?

None of them. All of them get temperatures well over 30°C in Summer although the average maximum in Sydney, Brisbane and Melbourne is below 30°. Temperatures above 40° occur in western Sydney, Melbourne and Perth. All the cities are sunny and none of them gets really cold. For cold weather you need to be in the mountains but they can still get hot in summer.

Australia's most southerly city is Hobart at about 40°S. Rome in Italy and New York are about 40°N. There is a lot of land that gets very cold north of Rome and New York. South of Hobart is the Southern Ocean. The ocean gets nowhere near as cold as the land masses of northern Europe and northern North America so snow is a rarity in Australia except on the mountains.

Want cold? No sun? Tasmania. Or head over the ocean to New Zealand (bottom of the South island).
As for the aforementioned cities...Melbourne is the coldest and the least sunny...but even it can have 40+ degree days.
