If you have time before the big Dinner Date then practice at night before you go to bed and in the morning when you wake up. When you pray you address Heavenly Father first. Then, you give thanks. For instance at dinner one would be thankful for the food. After giving thanks you ask for things like help with something or ask for a blessing of the food and maybe for the one who put effort into preparing the meal. just say how you feel and just because it might end up being short and sweet doesn't mean it wasn't good or from the heart. So my advice is to practice saying a morning and evening prayer. Even try saying prayer out loud.Then when it comes to the time to say grace at your bf's place you will feel more comfortable in saying a prayer out loud.

Find out a little something about the Faith your BF's family belongs to, then contact a minister/paster/clergyman of that faith for an appropriate blessing. Members of every faith are more than willing to discuss things with you, and I'm sure everyone involved will be grateful for the time you spent. If you're still really nervous, or you just don't feel comfortable with sayng grace, discuss it with your BF. If could be the two of you are not religiously compatible.

Of course you are nervous, you already have to meet them for the first time, that alone is nerve recking. Asking you to do grace, just puts it right up there. Did you tell him your situatioin and how it's affecting you?
But if you want to say grace simple and short, do not worry about what everyone will think of you, just do it.
THANK YOU LORD FOR THE FOOD WE ARE TO RECEIVE AND BLESS (NAME) FOR HAVING ME HERE TO ENJOY THIS SPECIAL MEAL.
Work with this, and eventually you will know what makes comfortable
