Try going to www.americancatholic.org

It's a Catholic website sponsored by the Franciscans and they have saints listed by patron saint.

I don't know whether there is one particular saint singled out for patronage of independence, but I would think it could be said of many of the martyrs.

Saint Francis of Assisi was rather independent.

There is a lot of information about him.
