The cheese I would like to use is Wenslydale with cranberries but I dont know what sauce would be nice

Wensleydale is really crumbly and will fall to pieces if you poke a fondue stick in it. - It wont make good dippers.

Try a cheese like haloumi - cypriot cheese that holds together when cooking - if it gets warm it also wont melt and drip - and maybe a tomato and chilli fondue sauce.

(haloumi is also good fried and served with salad and balsamic vinaigrette, mmm mm)

Cheese is not really used in a fondue because it melts too quickly, I would use the cheese in the sauce then have vegetables and chicken/meat to dip into it.
You should leave the dips in the sauce until they are properly cooked, you can also dip bread into the sauce.

Anything you use would have to be kept cool enough not to melt the cheese.

I'd suggest you just serve the cheese as an appetizer and do a regular fondue of some kind.

If the normal fondue is bread dipped into cheese, surely you should be dipping cheese into bread sauce.

I'm not sure because if you use a cheese fondue it might be too cheesy. I would suggest making a cheese or chocolate fondue and then get different things for dipping.

A lite mustardy type sauce to contrast with the flavour of the cheese, or if the cheese is mild have a stronger flavour dip
