I have a limited amount of time and money for that matter. Something with ground beef or chicken please.

Meat Patties.
500g (1lb) lean mince.
1 onion grated.
1 potato grated.
1 carrot grated.
1 egg beaten.
¼ Cup sultanas.
¼ Cup of fresh bread crumbs.
2T tomato sauce.
Olive oil.
(I)
Mix together all of the ingredients and shape into 6 even sized patties.
(II)
Heat a little oil in a fry pan and cook the patties in batches if necessary, over medium heat for about 5 minutes each side.
Serrve with mashed potatoes and minted peas or another vegetable.

Here is a couple of easy and cheap, but very good meals.

1lb of ground beef
1 can pork and beans
1 can tomatoe soup.

Brown and drain the beef, mix the other stuff in, season to taste. I like garlic, pepper, seasoned salt, and a little liquid smoke. Cook until hot, and serve over a slice of bread. Takes about 15 min from start to finish.

1lb ground beef,
1 can cream of mushroom
1cup sour cream
1 cup Frencies onion crisps
1 can green beans.

Brown and drain beef. Mix beef, soup, sour cream and green beans in a cassrole dish. Bake at 350 for about 20 min or until mixture is hot. Top with onion crisps and bake for another 5 min or unitl onions are a nice golden brown. Serve by itself or over rice. Very good.

Salisbury Steaks

1 lb, ground beef
1/2 chopped onion or 4T. Liptons Onion Soup Mix
dash or two of Worcestershire
1/2 C. seasoned bread crumbs
1 egg
season to taste
1 pkg. McCormicks brown gravy mix

Mix first six ingredients and shape into four oval patties
Saute on each side in a bit of olive oil.
Drain grease.

Mix gravy according to package directions. Pour over patties and simmer for around 45 minutes. Stir every now and then. I like to blend some sour cream into the gravy mix at the end of the cooking time.

For a large family:

Parmesan Chicken (Super Easy)

6 Chicken Breasts (Raw, Boneless, Skinless)

Mix :
1 can cream of chicken soup
1 cup parmesan cheese (I usually use the kind you shake
over spaghetti)
1 cup Mayo
1 tablespoon lemon juice
2 tsp curry powder

2 cups crushed cornflakes

Put chicken in a 9x13 baking dish. Cover raw chicken with the mixture. Top wih crushed cornflakes then bake @ 350F for 1 hour. Serve over rice.

Hint: If you do not have Curry Powder you don't have to buy a whole container to try this recipe. Go to the natural food section of your grocery store where they have small spice bins and you can buy just the amount you need.

Brown ground beef (rinse and drain)

put back into pot and add sliced potatoes and sliced onions and the salt, pepper and Worcestershire sauce. Then cover with water and let it boil until the potatoes and onions are tender. It doesn't take long and it is relatively inexpensive.

4 ingredients and 1 dish:

add some noodles, pull apart and add some ground beef, pour some type of sauce (cheese/alfredo/tomato) on top, and add about half of the dish with water and place in oven at 325 F for 30-40 minutes and you got a one dish clean up, cheap, quick meal.

Chicken Breasts and Asparagas Casserole:

4 Skinless/Boneless Chicken breasts
1 can Cream of Mushroom Soup
1/2 cup sour cream
1 box wild rice pilaf
1 lb fresh asparagas
1 4 oz container feta cheese

Make rice pilaf according to directions. Steam asparagas spears for 3 minutes and remove from heat. Season breasts with salt, pepper, garlic and saute to brown (if they have skin)
Place rice pilaf in baking dish. Top with chicken. Top chicken with asparagas spears. Mix soup with sour cream and put on top of chicken and asparagas. Sprinkle with feta cheese and bake at 350 degrees for 45 minutes.

Ground beef is very versatile and you can do a lot with it but it does depend on your taste and .what you have in your kitchen. You can fry the mince with a little chilli (sauce if you don't have) , tomatoes and peppers and if you have tortilla wraps . Wrap with cheese (if you like) and serve with salad. Meatballs can be made from ground beef. and can be made larger and served with potao and veg or smaller and served with spaghetti and tomatoe sauce. Spaghetti with ground beef is easy and you can add anyhting you have in your kitchen e.g peppers, tomatoes to the beed and it can be served with any type of pasta or rice. Cottage pie is easy.

Minced meat, finely chopped onion, crushed garlic clove, grated carrot, stock cube, dash of wine if open- ha ha..
Fry onions & garlic, add mince & brown. Sprinkle with a little flour to thicken. Add stock, carrots, seasoning bring back to boil & simmer gently until cooked & sauce has thickened. Put in bottom of a casserole dish, top with mash. Sprinkle top with grated cheese and put in oven on a high heat until cheese is brown & bubbling.


I like chicken salad and you can just grill your chicken rubbed in a marinafe, spices of your choice or anyway you like it and serve with salad vegetables.

Chicken Salad - Just use storebrand canned white meat, mayo, pickle relish, diced onion and hard boiled egg.

French bread- Store brand, just lightly toasted. Spread chicken salad over bread. enjoy.
