A gift is a nice thought but a better way to surprise him is to lean over during dinner and tell him you're not wearing any panties...then give him a few hints as to what naughty business awaits him in the car after dinner..IF you make it through the first course.
Another nice gift would be an antique fishing lure, but not nearly as much of a surprise.

How about an engraved pocket/hunting knife? Or a special hand-tied fly for fly fishing?
Maybe (if you can afford it) you could get him some type of fish-finder or GPS device.
You could also see if any taxidermists in your area offer a gift certificate (or you could print one of your own). The next time he catches a really big fish or gets a big animal on the hunt, you can have it mounted. :)

Does he have a handheld GPS? Those come in handy outdoors. I like to take mine hiking, rafting, mountain biking, etc.
The downside is they can be too spendy if you weren't planning on getting too fancy with your gift.

u should get him something like a gift certificate to like the fishing supplies store or something like that i guess. im not that great with presents for guys but thats ok
