I LOVE the rice at Chipotle. The cilantro lime kind. I want to make some tonight for my own burritos. I have two ideas of how to make it, which one seems best:

a) boil the water for the rice with cilantro and lime juice in it and then cook the rice in the flavored water.

b) cook the rice normally and then add lime juice and chopped cilantro.

Any help would be appreciated. :D

i've seen them make it at chipotle they add the lime juice and salt and cilantro after the rice is cooked

You almost got it............don't use water, use chicken broth (or a chicken bullion cube) for better flavor, use some lime zest (green part of the lime skin) and about 3 tablespoons of lime juice and cook the rice like you usually would.....Immediately before you serve it, fluff it with a fork and gently stir in the freshly chopped cilantro (don't chop the cilantro until the last minute, or it will turn a yukky grey/black color....Enjoy!!! What time's dinner???

I don't know what you'd class it as.... to be honest it sounds a little ordinary. And I wouldn't use brown rice for this because it's a risotto type dish.... 40-50mins is too long for it to cook. If you want to Greek it up I'd add some pine nuts at the garlic stage, chuck in some chopped spinach 1/2 way through cooking and instead of cilantro and lime juice throw in some oregano and lemon juice. I'd use stock instead of water though to add a bit of taste or at least a bit of seasoning. Edit: A bit of vege stock OR some salt and pepper (aka seasoning... in Australia anyway)

i would probably cook the rice using vegatable broth instead of water. and probably some lime zest. Then after the rice and resting for 5 minutes, add chopped cilantro, lime juice and fluff with fork.
