Pound or so (depending on how many people) of hamburger or mixture of hamburger with other meat like veal, etc.

Season with salt, course pepper, garlic powder, onion powder. Add one egg and bread crumbs. You can also use crumbled up saltine crackers. This is to help hold the meatloaf together.

Here's a neat idea that you don't have to use. but it adds a nice gourmet type touch to a casual dish. While you're seasoning the meat, etc., start an egg for hard boiling. When it's done and peeled, form a hole right in the middle of your loaf and put the egg inside. Now cover it with meat so that it is right in the middle height-wise. When the loaf is done, and you cut it in slices, the middle slices will have the egg slices in the middle. It's a pretty cool presentation.

Bake at 375 or so for about 45-hour depending on thickness of the loaf. About 30 mins into the cooking, brush the top of the loaf with tomato paste and sauce mixture. You can season this to taste as well. Then continue to bake. This will form a nice top on the meat loaf.

The best way to make meatloaf is to never measure, and don't use a recipe. For some strange reason people love my meatloaf. I even have a friend who asks me to make it for him for Christmas and his birthday. I myself always use ground turkey instead of beef. It has a much better flavor and its healthier. If you didn't tell anyone they would never be able to tell. My basic ingredients: Meat, eggs, Italian bread crumbs, salt, pepper, garlic powder. My variables (depending on what is around the house) Chopped onions, green peppers, Parmesan cheese, Worcestershire. And my special ingredient: a few drops of hot sauce (not enough to be hot, it just adds this great flavor. Then I top with either brown gravy or a mixture of katsup, Worcestershire, salt, pepper, and garlic. But, you can use anything Ive used crushed Italian tomatoes before. The best thing about meatloaf is you can do any thing. You can replace breadcrumbs for rice, cornflakes, or stuffing. I cook a pound of meat size at 450 for about 45mins to an hour. In a covered dish. This keeps the meatloaf moist and juicy, not dry. Good luck and have fun.

My husband makes a wonderful meatloaf, but the recipe is kind of vague, because he adds things until it "looks right." He usually uses 2 pounds of ground chuck, 1 onion, 3 slices of bread, ketchup, and salt and pepper to taste. Dice the onion and add it to the ground chuck. Break the bread into about 1/2 inch pieces, and add it to the mix. Add salt and pepper, then mix in ketchup until it holds together well. Pour a layer of ketchup on top, then cook in a covered dish at 350 degrees for an hour (?--check it regularly, because I'm not sure of the time). About 10 minutes before taking it out, uncover it and let it brown. I never liked meatloaf before I ate his.
