I don't know what you've already tried but my kids and I had to eat breakfast on the run. So I came with a couple of ideas they seemed to like. I made sausages or bacon. Then I made pancakes with maple syrup in the batter & cooked. Then I just wrapped up the sausage link or bacon strip in the pancake. I rolled it like a crepe. One was enough usually. Another idea was a sausage patty or bacon, on a fried egg with cheese. I either toasted bread or an english muffin. I put it together. I wrapped a paper towel around the bottom & tucked the sides in so they didn't make such a mess. If you're not traveling in the car as we were, you don't to worry so much about that. Or I made a protein shake with fruit and milk and added ice. It came out like a "breakfast shake". One more idea, I put plain yoghurt in a plastic clear cup, mixed cut up fruit in it and squirted a little honey over the top & then sprinkled either grape nuts or actual slightly ground walnuts or pecans. You may have to experiment with your's. You never know what they will go for until you try. But if you make it unusual and fun they will usually go for it.

Chocolate Chip Pancakes

1 1/4 C flour
1 T sugar
1/4 tsp. cinnamon
1 T baking powder
1/4 tsp. salt
2 eggs
1 C milk
4 T melted butter
3/4 tsp. vanilla
3/4 C chocolate chips




Serves 4

Preheat griddle or skillet. Combine flour, sugar, cinnamon, baking powder and salt in a large bowl. Mix together liquid ingredients and beat into dry mixture until smooth. Fold in the chocolate chips. Pour 1/4 cup batter for each pancake onto hot griddle. Cook until the bubbles that form on top begin to pop, before flipping, then cook a minute or so more. Serve immediately topped with your favorite syrup.

My 7 yr. old son loves alot of things but I switch them up once in a while..for example-
sometimes I let him help me make it!...we make breakfast Pizza..english muffins with mayo..crumbled scrambled eggs,cheese,bits of ham or sausage and then we make a drink like orange/strawberry/banana juice.
Sometimes I use cookie cutters to cut shapes out of pancakes and arrange a whole scene on his plate.
Sometimes we have "backwards" day...desert first, dinner, lunch, and breakfast. It's fun and by the end of the day you have ate the same foods you would've ate anyway! On these days I try to do muffins or something like that for "dessert".
Just be creative and this is a great way to get him to try new foods. My son thought it was cool when I topped a waffle with "springtime mix" (which was actually kiwi, mango, and grapefruit.) This was a revelation for him because he didn't know till afterwards because he had claimed to "hate fruit".
Be creative... You can cut a sausage link halfway up multiple times and stand it up- it can be an octopus in a wave of eggs.
My son eats very healthy and isn't afraid to try anything- plus it starts the day off good when it makes him smile and me too!

Who said you have to eat breakfast food in the morning and dinner food at night? Mix things up! If you have left-overs (or plan on having left overs) they make a good breakfast. Some meats taste just fine cold. Mashed potatoes can be reheated or my favorite, fried. (Make a patty and brown in butter). Fruit salad for a bit of fiber.

In fact, granola sprinkled over fruit salad makes a good breakfast or lunch.

Strange as it may seem, salads are good for breakfast, though it's usually an older child or adult who appreciates the crunchiness in the morning.

Soup for breakfast? Sure. Chicken vegetable with noodles!

Sandwhich for breakfast? Why not!?

Of course peanutbutter goes on everything: waffles, pancakes, apple slices.

Rice pudding.......if you make it yourself from low fat milk and keep the sweetening way low. Add some raisins or dried cherries.

All the other answers are very good.

I wanted just to add that my best memory of my father doing me breakfast was him making attention either to presentation, or hiding message in my food.

We forget sometimes that serving food to our kids is also a touch to reach them and remind them we love them a lot.

He was fixing my OJ with a flower on the side of the glass. Not a lot, not prowess, just normal breakfast with a twist of...Love.

Something, a code between him and me.

Just thought to give you that hint because as an adult, it's very fond moments I do cherish.

Egg Burrito
2 eggs
1 slice American or cheddar cheese
1 tbsp. salsa
4-6 drops hot sauce (if desired)
1 soft tortilla shell
1 tbsp. butter
Bacon or sausage (optional)
Step 1
In a small bowl, beat eggs well.

Step 2
Melt butter in a small skillet over medium-low heat; tilt pan to coat.

Step 3
Pour eggs into skillet. Scramble eggs to desired doneness.

Step 4
Place scrambled eggs, slice cheese and salsa on tortilla. Top with hot sauce.

Step 5
Microwave on high until cheese melts. Wrap and enjoy

Banana Tortillas Snacks
1 (6 inch) flour tortilla
2 tablespoons peanut butter
1 tablespoon honey
1 banana
2 tablespoons raisins
Lay tortilla flat. Spread peanut butter and honey on tortilla. Place banana in the middle and sprinkle in the raisins. Wrap, and serve.

Buy different ingredients in separate packets such as grains, bran, dried fruit etc and get him to mix them together. He can be a chef making a breakfast recipe so get him a bakers hat to put on while doing the mixing

Cut out a slice of bread with a cookie cutter, heat a skillet with a little butter, then whip an egg and pour it inside the bread in the skillet. Cook and turn. Salt the egg before you cook it. Toast the part you cut out and serve as toast with the meal. Make more than one, as he will love them.

baked apple pancake... easier then it sounds. just get a basic pancake recipe (shaker bottle) make sure it's thick ,
add a tsp Cinnamon and 1 apple diced. Turn grill on med and heat skillet/ fry pan under grill. melt a Lil butter and pour mix into pan, put under grill until risen and brown. turn heat down if needed and b careful if using pan with plastic handle..... and if his just lazy try a smoothie with yogurt and banana, berries, mango u can get in a tin or frozen. add an egg for extra protein when his not looking he will never know. good luck
