I coat mine raw , but if you want them to cook faster you could steam them first. They would not have quiet as good a flavor though.

Coat them raw and then cook. If you are using flour as a coating, place the coated pieces on a covered plate in the frig for about a half hour or until the flour has absorbed moisture from the chicken and the coating will not be as likely to fall off while frying.

Cut your raw chicken into bite size pieces. Drop them first several at a time into a plastic baggie or paper lunch bag of flour seasoned with salt, pepper, and garlic powder, and shake. Then drop them one at a time into a bowl of 2 0r 3 beaten eggs thinned w/ a tablespoon or two of milk or water. Then drop them in another bag of breadcrumbs and shake. You can fry these in oil until golden brown or place them on a well oiled baking pan and bake them in the oven at 375 for 20 minutes until their golden brown.Turn once after 12 minutes when their brown on one side. Baking is probably the easier way to go as you are less likely to burn them. If u fry them on the stove heat the oil on medium or medium high heat and test the oil first by dropping a cube of bread in the oil. It should lightly brown and rise to the top right away. If it sinks to the bottom and absorbs the oil, the oils too cold. If it turns dark brown right away oils too hot. When oils ready the nuggets should only take about 7 minutes or so. I make buffalo nuggets. You cut raw chicken breast into chunks and put into a plastic bag, pour franks red hot sauce over the top of the chicken and let them all get coated. In a glass pie plate or another plastic bag combine 2 cups flour, 1 1/2 tsp salt, 1 tsp pepper and I add 1 tsp. baking powder. Remove chicken pieces and dredge in the flour mixture and fry. The hot sauce adds so much flavor and believe it or not, these are not hot. You can dip them in blue cheese dressing or ranch. Yum!

Just coat them in breadcrumbs and fry. I would use a bit of egg to make sure the breadcrumbs stick and cut one open to check it is cooked before you eat it.

Coat them, then bake them!! I like to use bake and shake and put them into the oven! It is more healthy and tastes better!
