Parsley will yellow if allowed to dry out between waterings.
Keep it moist but not soaked.

Sounds like too much water. May need to give it a bit better drainage. Also some plants can't handle intense sun, I've never grown parsly so not sure about that. Check the web for growing parsely.

The only times I have had that problem they were not getting enough light (shaded by oak after 3 pm) or getting too much water (the outer leaves turn yellow after several days of rain)

Just yank the outer leaves - more will grow

Has it flowered and seeded yet? I had one that overwintered from last year. If it has flowered and seeded it may be getting ready to croak.
