In the real world, the seasons are based on major changes in temperature and rainfall. Thus people who are told that winter starts on December 21 in the upper midwest of the US will say, "Ha, we get snow in November and sometimes October." Some parts of the world only have two seasons, hot and dry, cooler and wet.
The four seasons were defined by Europeans mostly and spring is when planting can be done without the risk of frost damage and when the ground is warm enough for seeds and seedlings to grow. It ends when it gets too hot for early spring plants (which like cooler weather) to thrive and when it starts to get hot and dry. Fall is when summer grain crops ripen and are harvested along with fall fruiting plants like apples when products are gathered for the winter.
