Both are correct. It depends entirely upon how it is used in a sentence. For example, you'd say "every one of them is an idiot" or "every one of them are going to the beach". And so forth.

"Everyone of them are" is correct (as long as it is "everyone" and not "every one", then it would be "Every one of them is"), just as "All of them are" is correct.
In these cases "Everyone of" is describing "them", and "them" by itself is "they", and it is improper to say "They is".
Everyone by itself would be "Everyone is" since Everyone would then be what is being described.
