In SharePoint, how do you alphabetize the documents in the Quick Launch bar?

You merely drag and drop them in the order you want them.

Just left click on the icon and hold the mouse key down, and then drag it to the position you want it in, and release the mouse key.

If you want to add icons to the quick launch bar, just drag the icon down there from the desktop.
