Is it recommended when you sell your computer, to erase or change the serial number and asign a new number to the new owner

What type of computer is it? And it is best not to erase the serial number because it will cause the next tech working on it hell to find any documentation on it. The service tag number you can erase if you want to but dont bother. It can be found in your BIOS ...which cannot be erased.

You do not have to worry about deleting the serial number or service tag number from your computer. These will only referenece the build of your computer and let the next person know what hardware is installed in the system for drivers info. None of your personal information is tied to either of these identifiers. If the system is out of warranty and you wish to sell it with the hard drive, download a document SHREDDER program and use it to shred your profiles on the computer then reformat the hard drive. This wil overwrite any of the data and make it unretrievable.

The only reason to erase and/or change those numbers is if you are dealing in hot merchandise. As long as you wipe the hard drive (not just format but completely wipe it) the numbers are immaterial as you would not be selling a used system that was still under warrenty.
