Tuesday and Wenesday are going to be your absolute best bet. As friday and saturday are obviously the busiest. Thursday and Sunday will be somewhat busy as some people will fly in a day early or fly out a day late. Monday also tends to be a busy flying day in general as it's the beginning of a work week. but again it'll be less busy than thursday or sunday. But for rock bottom prices. Tuesday and Wednesday are your best bets for hotel and air prices.

Go to http://www.southwestair.com and type in a date. You will see at a box at the top of the screen when you can click if you are flexible about your dates and want to view the rates on a calendar. This is the best way to find out the best dates to fly.

I find Tuesday and Wednesday to be cheapest to fly in, Thursday and Friday the most expensive to fly in to the city and Monday and Tuesday the most expensive to leave.

As far as vacation packages go, we have always had the best luck with pricing if going on Sunday through Thursday.

It always seems like the best rates are on Wednesday for me!
