Fast and easy? OK.
Chop up some tomatoes, onions, cucumbers and dill. (If you have red or yellow peppers chop them up too)
Mix it all with three-four table spoons of sour-cream and add some salt. Keep mixing for about two minutes until the sour cream is equally distributed.
Boil a few potatoes and butter them and mash with milk or sour-cream.
That would be a good meal if you are a vegetarian.
But if you like meat, than fry some chicken, or lamb, and add it to the above.

On fast and easy nights we have stuff that you can just put in the oven and bake, like chicken patties or fish patties, french fries and I put the vegetable (corn, green beans) etc. in the oven also. I line a baking sheet with aluminum foil for easy cleanup on the patties and fries, and cook the vegetable in and oven safe serving dish.
Another fast and easy side dish is macaroni and cheese or mashed potatoes in the microwave and cook it in the bowl that you are going to serve it in...saves clean up also.

Black bean salsa: paired with Fish Tacos!
2 Tomatoes
2 cans of black beans
1 can of corn
1/2 cup of Cilantro
1 Tbls of Red Wine Vinegar
1 Tbls of Olive Oil
Salt and Pepper to taste
The recipe is really light and good and who doesn't like a good fish taco now and then :)

make shrimp alfredo and mashed potatoes.
get some cooked, deveined shrimp. put it in the skillet with some garlic salt and butter until its hot... get a tub of already made mashed potatoes that are microwaveable, a jar of alfredo sauce and some angle hair pasta.
takes 10 minutes and its really good.

pork tenderloin...while its in the oven with baked potatoes, you can chop a salad, and change out of your work clothes...put some veggies on the stove, and voila, a good, homecooked meal with very little effort.
