even if i delete cookies and temp files, would the company that i work for still be able to track which sites i'm going to and such?

If they want to yes.

The company probably has a switch/router that connects the companies computers to the Internet. This device relays requests from the computers connected to it to the Internet.
By looking in the logs of the router, it is possible to tell where a specific IP address (ie. computer) has gone on the Internet.

The Internet policy of the company should tell you under what circumstances they will do it.

Reality- unless there is a problem the IT department probably has to much else to do like keeping computers up and running, preventing SPAM from overwhelming the mail server, etc. to worry about the Internet surfing habits of employees.
