Herd is the noun, saw is the verb...but what's cattle? Does cattle become an adjective?

Cattle is a noun, and, as others have said, it is the object of the preposition 'of' in this sentence. An adjective cannot be the object of a preposition; only a noun or pronoun can follow 'of' or any other preposition in English.

Cattle (a group of cows) is preceded by a preposition, therefore cattle is the object of the preposition

I'm not entirely sure on this, but I believe it's still just a noun, just that it's part of a phrase and not the " main " noun of it.
