the key to authentic italian meatballs is a mixture of beef/veal and pork.
Usually you can get this already packaged at the store -they call it meatloaf mix. But this is what we italians use.
about 1 1/4 pounds of that, mixed with an egg, grated pecorino romano cheese, very finely minced garlic and italian parsley, bread crumbs and mix well either in a food processor or with a stand mixer.
shape into balls and fry in olive oil until golden (this will keep the meatballs in their round shape and keep them from falling apart)
after fried, add to your tomato sauce and cook for at least an hour or so.
The meat is what gives your sauce that "italian" flavor.

ITALIAN MEATBALLS AND SAUCE

Meatballs:

Meatballs are just small hamburgers, rolled in the hand so that are ball shaped and not flat.
If you use good minced steak, mixed with sweated onions and garlic and some herbs of your choice and work the mixture together, you won't need breadcrumbs. Fry off first before adding them to your favourite tomato sauce and they shouldn't disintegrate.

However, my favourite Italian Restaurant in Hong Kong carried a warning at the top of the menu.
WE DO NOT SERVE MEATBALLS AND SPAGHETTI. THIS IS NOT AN ITALIAN DISH!!

Meatballs are easy! I usually buy pre-packed mince. Fry one finely diced onion. Add this to the mince, also add an egg, chopped garlic, salt and pepper and finely chopped basil. Roll them into balls about the size of a ping pong ball. Fry them in oil for about twenty minutes (cut one in half to make sure it is cooked properly). If you want to make the sauce using fresh tomatoes you're going to need a lot! Deskin them by placing each tomato in boiling water for 20-30 seconds and the skin will just peel right off. Chop them up finely and add whatever seasoning you like. I would recommend using tinned tomatoes though because they have more flavour. A lot of people say to put breadcrumbs in the meatballs but I never have any and they seem to be fine-just pack them tightly.

Ingredients:
1 lb ground beef
1/2 c. Italian dry bread crumbs
1 egg
1/4 c. finely minced fresh parsley
1/4 c. Parmesan or Romano cheese
little salt and pepper
5 to 6 cloves fresh garlic, minced
1 small onion, finely chopped

Directions:
Mix all together with your hands, knead a little and form into walnut size balls. Place in a hot skillet with a little extra virgin olive oil and brown over medium heat. Place in your favorite marinara sauce and cook for a half hour to an hour so flavor can go through....ymmmm...serve with hot pasta and extra cheese.

Good Luck :)
