many years ago I travelled from Madrid to Jerez, having arrived at the airport. I took a taxi to Atocha Station, Madrid and the train went straight through, without a need for a change. Checking the Madrid Airport site, I find there is a metro line to the city centre - from Terminal 2. Apparently you have to change on to line 8 at Mar de Cristal to get to the city centre. There are also regular buses.
