Since fondant can become brittle as it dries, you need to work quickly. If you can't, then cover it with a cloth dish towel to keep it moist.

ITS BEST TO USE IT IMMEDIATELY AS IT DRIES OUT VERY QUICK.DO NOT ROLL IT OUT TILL YOU ARE READY TO ICE THE CAKE.IF YOU DO HAVE TO LEAVE IT COVER IT WITH A DAMP TEA TOWEL.
