Very slim. Meat will last for days as long as it has been stored in a cool place.
As long as it was cooked through it will be OK.
When I was a boy before refrigerators, meat was kept on a plate covered by a tea towel, for several days in a meat cabinet.

Ground beef turns from red to brown when it's been exposed to air, so it's normal for meat to turn a little brown if it's been in the fridge for a day or two, because it was exposed to air when it was packaged. Always follow the use by date on the package, and use common sense. If it smells or feels differently than meat usually does, get rid of it. In fact, if you're not sure if meat is good, it's always safest to get rid of it.
Food poisoning hits fast--believe me, you'll know within a few hours if you have it!

when the meat is brown and smells dont eat it plus u cant leave meat out chances u have poisoning are good.

you most likely won't get food poisoning, but it definitely wasn't good meat.
blech. be careful doing that.next time, if possibly you're not gonna eat it, just toss it into the freezer right away...
