Easy Chicken Macaroni Salad:

2 chicken breasts, cooked and diced
1 green bell pepper, diced
1/2 red onion, diced
4 roma tomatoes, diced
1 (1 1/4 ounce) packet ranch dressing mix
1 1/2 cups mayonnaise
1 (16 ounce) package macaroni
1. Prepare macaroni according to package instructions.
2. While cooking, dice onion, bell pepper, tomatoes, and chicken.
3. Put in bowl and add mayo and dressing mix.
4. When macaroni is done, drain and rinse with cold water, and mix with other ingredients.
5. Put in fridge until use, or use immediately.

This is how I make macaroni salad, and it couldn't be easier:
Boil a package of macaroni until done, and rinse in cold water to stop the cooking.
Mix together a cup of Miracle Whip, a tablespoon of sweet pickle relish, a tablespoon of sugar, and onion and garlic salt to taste. You can add more relish if your family likes it.
Add any or all of the following to the macaroni: a cup of small shrimp, deveined; a cup of Cheddar cheese cubes; small can green peas, thoroughly drained; 3 or 4 diced hard-boiled eggs; 1/4 cup diced celery; 1/4 diced red or green peppers.
Pour the dressing over the macaroni and mix thoroughly. Chill, and add a little more Miracle Whip before serving if the salad has absorbed too much of the dressing.
Garnish with slices of red and green pepper and slices of hard-boiled eggs, if desired.

Here is the recipe I use, be sure and "click" on the website below for a picture of it. "Awesome Ranch Ham Macaroni Salad" 2 cups cooked macaroni noodles, drained (cook the macaroni until al dente!) 1 cup frozen peas (can use more!) 2 stalks celery, chopped 1 cup cooked ham, cut in cubes (or more if desired) 1 cup cheddar cheese, shredded (or use finely chopped cheddar cubes) 4 hard-boiled eggs, chopped 1/4 cup sweet pickle relish 1/2 cup ranch salad dressing (homemade or store-bought) 1/2 cup mayonnaise (OR Miracle Whip salad dressing is fine) 1 teaspoon prepared mustard or 1/2 teaspoon mustard powder 1/4 teaspoon black pepper 1 teaspoon seasoning salt or salt (or to taste) In a large bowl, combine the first 6 ingredients; mix to combine. In a small bowl, combine relish, mayo, ranch salad dressing and mustard; mix well then add to macaroni mixture; toss to coat, then season with salt and pepper. Add in chopped yum yum pickles if using; mix to combine. Refrigerate for 3 or more hours to blend flavors. Delicious!

Try this one it's a family fav
2lbs. Macaroni {cooked, drained and cooled}
6 boiled eggs diced
1/2 cup chopped celery
1/2 cup chopped onions
1/4 cup chopped green peppers
3 cups salad dressing {like Miracle Whip}
1/2 cup sugar
1/2 cup diced Colby cheese
few drops yellow food coloring
Mix all together chill

The easiest macaroni salad I know of is made by just using a box of macaroni noodles, cut up some onion, add your choice of sweet or regular relish all to your taste and for the binder use mayo. I add tuna to mine but lots of people make it without. There are other things people use as well like celery but I'm not to fond of it.

This is my own recipe I made up years ago and I have been taking it to every family get together and it is always a hit. I don't have exact measurements, but that is the nice thing to taste as you go.
Cook up your favorite pasta al dente, drain, and set aside (use while still warm)
Add all the other ingredients to pasta in big bowl and fold in the dressing mixture last. This is better made the night before. This allows the flavors to marry.
1 jar of marinated artichoke hearts- reserve most of the liquid to add to dressing
1 can of chopped mild green chilis
a cup of shredded carrots
1 yellow bell pepper finally chopped
1 can of chopped black or green olives
green, yellow,or red onion finely chopped or you can use dried onions
1 package of boneless chicken breasts cubed in lunch meat section or you can use a rotosseri chicken or make your own chicken.
Dressing-
Mayo, mustard, salt, papper, your favorite italian dressing.
mix everything together in big bowl. Taste to make sure it has enough salt and pepper.
You only need 1/2 can of the green chilis

I like to put canned corn, peas, carrots, and diced tomatoes in my macaroni salad. also, onion, celery, cheese, and ranch salad dressing. You can choose the things you like and leave out the things you dont. I've also made it with italian dressing. Its good both ways.

Cut up some red bel peppers into small squares.
Throw in some cubed cheddar cheese and peas,(from a can or frozen peas that you have thawed. Then toss it all is some mayonaise, add salt and pepper, then voila!
