Cook the sausage and peppers in a pan just till done. Then add a can of fresh tomatoes or a can of premade sauce. Easy.
Another great way to prepare is to quick broil the sausage for 10 minutes in your oven. Then place in a preheated crock pot with onions, peppers and a sprinkle of seasonings of your choice. Let cook on low all day. By sundown, you will have a herd of friends outside your door with rolls and Coronas!

Tomato sauce would be great with a sausage and pepper sandwich. There are quite a few ways to do this. You could spread the sauce on both sides of the bread and build the sandwich. You could heat up the sauce and pour it in a bowl, which you could use for dipping the sandwich in. You could reduce the sauce by heating it up and let it boil off some of the water in the sauce and letting it get thick, then pour the sauce on top of the sausage as well as spreading some on the bread prior to building the sandwich. Here's a really quick and easy way to do it. Cook the sausage and peppers together ( I like to add onions too )
Get a jar of spaghetti sauce ( I like to use one with mushrooms in it) and heat some up in the microwave or on the stove.
The when you put the sausage and peppers ( onions if you choose ) on the bun, just spoon the spaghetti sauce over it.
Yummy! Bon appetite!

I love sausage and peppers! Here's how I make them:
Hot Lean Turkey Italian Sausages
1/2 cup sliced Green Bell Pepper
1/2 cup sliced Yellow Bell Pepper
1/2 cup sliced yellow onion
1 clove garlic, minced
1 can diced tomatoes with garlic and onion
1 T dried Italian Herbs
1/4 tsp salt
1/4 tsp pepper
1/4 tsp red pepper flakes
3 T olive oil
Crusty Italian Rolls
In skillet, heat olive oil and add onion and garlic. Add sausage links and brown. Add bell peppers, tomatos, salt, pepper, red pepper, and Italian seasoning. Cover and simmer for 30 minutes. Remove cover and take out sausage. Increase heat to medium and cook until tomato mixture is thickened. Open crusty rolls and add sausage, peppers, onion, and some of the tomato. Sprinkle with parmesan and enjoy!

Spread your bread with the tomato sauce instead of butter as the bread will absorb it and lessen the chances of it dribbling out, otherwise it sounds great.
