We love this at our house...
Dijon-Tarragon Cream Chicken
Prep Time: 15 Minutes
Cook Time: 30 Minutes
Ready In: 45 Minutes
Yields: 4 servings
1 tablespoon butter
1 tablespoon olive oil
4 skinless, boneless chicken breast halves
salt and pepper to taste
1 cup heavy cream
2 tablespoon Dijon mustard
4 teaspoons chopped fresh tarragon
1. Melt the butter and heat the oil in a skillet over medium-high heat. Season chicken with salt and pepper, and place in the skillet. Brown on both sides. Reduce heat to medium, cover, and continue cooking 15 minutes, or until chicken juices run clear. Set aside and keep warm.
2. Stir cream into the pan, scraping up brown bits. Mix in mustard and tarragon. Cook and stir 5 minutes, or until thickened. Return chicken to skillet to coat with sauce. Drizzle chicken with remaining sauce to serve.
I usually serve this with asparagus spears and mashed potatoes.

Chicken Pie (Lazy Man Version)
Buy 1 kg at the Supermarket Deli bar Shredded Chicken
Slice a large onion into rings or crescents and soften in oil in a fry pan.
Sift over some plain white flour and stir over med/low heat for a couple of minutes and stir in some milk until you have a fairly thick sauce.
Add shredded chicken and combine. Turn off heat and let the sauce cool and the chicken warm.
In the mean time line a greased pie dish with a sheet of puff pastry.
Individual oval pie dishes could be used if you have 4 to cook for.
Once the chicken mix has cooled 2/3 rds fill the pie dishes.
Cover with another piece of pastry trim edges and brush with milk. Spear the top with the tip of a knife to create steam vent.
Place in a preheated oven 160C for 30-40 minutes until the tops are browned nicely.
Remove and place on a wire rack to cool.
A teaspoon of curry powder added with the flour would be great.
I would have minted peas, mashed potatoes and gravy.

Classic Chicken Divan
2 -10oz packages of Frozen Broccoli Pieces
1/4 cup Margarine or Butter
6 Tablespoons Flour
2 cups Chicken Broth
1/2 cup Heavy Cream
6 Boneless Skinless Chicken Breasts
1/4 cup Graded Parmesan Cheese
1) Set oven to 350 degrees
2) Cook Broccoli and drain
3) Melt butter in sauce pan; blend in flour; 1/2 teaspoon of salt; and a dash of pepper.
4) Add chicken broth, cook and stir till mixture thickens and bubbles.
5) Stir in cream, add Parmesan (remove from heat)
6) Place broccoli in baking dish, top with 1/2 of sauce mix.
7) Place chicken breasts on top of broccoli & sauce, top with remaining sauce (and sprinkle with a little extra Parmesan cheese)
8) Cook for 1 hour (or until done)

Cheeseburger Macaroni
1 pound of hamburger
1/4 c. chopped onion (optional)
1/3 c. ketchup
1 1/2 c. water
1 pkg Velveeta Shells and Cheese Dinner
1. Brown hamburger with onion (optional) in large skillet; drain
2. Place hamburger in skillet, stir in 1 1/2 c. water, ketchup, and shell macaroni.
Bring to a boil. Reduce heat to medium low; cover. Simmer 10-12 minutes or until macaroni is tender.
3. Add velveeta cheese sauce; stir until melted.

Chicken parmasan and pasta.Chicken cultet dip in egg and bread crums...fry or bake cutlets.Put in a pan add tomato sauce and cheese bake on 350 for about 20-30 minutes.Or until cheese is melted.Boil water for pasta or ravioli and cook 9-10 minutes until tender.On the side some garlic bread top with cheese.

I only cook for two, my husband & I, but this is one of our favorites.
Take 2 fresh salmon filets and marinade overnight in Newman's Own Low Fat Sesame Ginger Dressing. Place in broiler on high covered with foil for 15 minutes. Or, place on pre-heated, pre-oiled grill for 3 minutes each side. Just finish off with a fresh veggie, asparagus or pea pods & red peppers - my fave choices, and a potato if you need more and you're all set for a quick easy delicious dinner. ENJOY!

P.S. I leave off the mushrooms because we do not like them, but if you like mushrooms, I would leave them in.
Cajun Chicken Pasta
4 ounces linguine
2 boneless skinless chicken breasts, cut into thin strips
2 teaspoons cajun seasoning (or to taste)
2 tablespoons butter or margarine
1/4 cup chopped green bell peppers
1/4 cup chopped red bell peppers
4 ounces sliced mushrooms
1 thinly sliced green onion (1 to 2)
1 cup heavy cream (1 to 2 cups)
1/4 teaspoon salt
1/4 teaspoon dried basil
1/4 teaspoon lemon pepper
1/8 teaspoon garlic powder
1/8 teaspoon black pepper
In a large pot with boiling salted water cook pasta until al dente; drain.
While the pasta is cooking, place chicken and Cajun seasoning in a bowl and toss to coat.
In a large skillet over medium heat saute chicken in butter until chicken is tender, about 5-7 minutes.
Add green and red bell peppers, sliced mushrooms and onions, and cook for 2-3 minutes .
Reduce heat; add heavy cream, basil, lemon pepper, salt, garlic powder and pepper and heat through.
In a large bowl toss linguini with sauce.
Sprinkle with grated Parmesan cheese if desired.

TAKE BONELESS PORK CHOPS
2 c. minute rice
1 can french onion soup
brown chops in skillet,remove
add the 2 cups of rice , can of french onion soup, 1/2 can of water
submerge chops in the soup rice mixture cover and cook on the stove top for about 20 to 30 minutes on simmer.
UN believable smell while cooking and you end up with most chops with a onion flavored rice
mmmmmmgoood!

Here are some of our family favorites.
This is quick and easy. .
Saturday Chicken
5 servings
10 chicken legs (or whatever you prefer)
(you dont have to use that many chicken pieces. Use how many pieces you want. the rest of the recipe stays the same.)
1 can condensed cream of mushroom (or cream of chicken)
1 cup of cream (dont cheat and use milk; the cream makes a lot of difference)
salt, garlic powder, and paprika- to taste
chopped parsley
Season chicken with salt, garlic, and paprika. Next, spread it out, in one layer baking pan. Dilute the soup with the cream; pour it over the chicken, and sprinkle parsley on top.
Bake , uncovered, at 350' for 1 hour or until juices run clear when chicken is pierced with fork.
Makes a delicious gravy. Serve with mashed potatoes or buttered noodles or rice.
Broccoli Chicken Casserole
2 boiled chicken breasts, diced into small chunks
(just boil the chicken for at least 10-15 minutes or until no longer pink)
Cool and then cut into chunks
1 pkg broccoli
1 can of cream of chicken
Pepperidge Farm Stuffing
1/2 c. mayonnaise
1 1/2 tsp. lemon juice
4 oz pkg mild cheddar cheese
Boiled the broccoli for 5 minutes, then drain. I was too afraid to put uncooked broccoli in the casserole, (thought i would ruin it).
Combine soup, mayonnaise, and lemon juice. Mix with broccoli and diced chicken. Sprinkle with cheese and stuffing mix. Bake at 350' for 35 minutes :0}

Hamburger Parmesan
Preheat oven to 400'
6 servings
1 1/2 pounds of ground beef
1/4 c. flour (may take more)
2 eggs beaten
1 c. italian bread crumbs (may take more)
6 slices of mozzarella cheese ( i have used shredded)
1 can of mushroom pieces, drained
1 jar (16oz) spaghetti sauce
3 or more tbsp of grated parmesan cheese
Shape beef into patties. Coat each patty with flour. Dip in eggs. Coat with crumbs. Arrange in a single layer in a baking pan. Top each patty with mozzarella cheese slice. Place mushrooms on top. Pour on spaghetti sauce. Sprinkle with parmesan cheese. Bake uncovered 25 minutes or until sauce is bubbly and cheese is melted and of course the hamburger is cooked. May have to add a little water to the pan to keep the sauce from drying out.
And spray pan with non stick cooking spray

marinate pork chop in soy sauce, sugar and garlic.
pan fry the pork chop and remove.
lightly stir fry the spinach.
