If you are do not want to open a can of anything. Here is a recipe for CHEESE SAUCE

It is a basic Bechamel Sauce with Cheese. You can substitue the 1 Cup of any type of Cheese.

Personal Suggestions to add to the recipe
1. Have 2 clove, half an onion and a bay leave in the milk on low heat to have some added flavor about 15-20 minutes. Strain these items before you put them in the Roue (or is Rouge)

2. Don't dump all the cheese at once. Slowly stir in the cheese. Makes the sauce more smooth.

3. Add some dry mustard for some bite and a bit of paprika for some heat. Of course it is to taste and preference.

INGREDIENTS:
3 tablespoons butter
3 tablespoons flour
1/2 teaspoon salt
1/8 teaspoon ground black or white pepper
1 1/2 cups milk
1 cup grated sharp Cheddar or smoky flavor Cheddar cheese
PREPARATION:
Melt butter; remove from heat. Stir in flour and seasonings. Gradually add milk, stirring until well mixed. Cook over low heat, stirring constantly, until thickened and smooth. Cook for 5 minutes longer; add cheese.

When we lived in Buffalo, we had curly fries with brown gravy. Just thinking about it makes me drool!
It is sooooooooo easy! Buy a package of Brown Gravy Mix from the grocery store, there are several brands, this is an easy one.
Make the gravy per instructions but let cook longer so it thickens a bit more, stirring!
Pour over the fries or put in a little individual cup for dipping.
Use while hot!
YUM!!!!

Dizz gives you some ideas. In Belgium they also eat frites with curried mayonaise. We also like them with sauce tartre, especially if it has some finely chopped onion in it.

Recently, "The New York Times" food section had a small article documenting a growing popularity in the USA of the Québecois dish poutine. I think poutine is god-awful (and certainly artery-clogging) but FYI it is a plate of frites topped by mild cheddar cheese curds on which is slopped hot beef gravy.

We just use plain old fry sauce. Mix some miracle whip or mayonnaise with a splat of musturd. Put a big sqeeze of ketchup. Stir and dip.

Tarragon mayo. Just blend those two, let flavors blend in frig for awhile, then serve. Also Mayo with ketchup, mixed. Ketchup with a little mustard. Mayo with a little sour cream and horseradish. Experiment. You'll find some you really like.

chop some onions with a little of garlic and some tomate sauce and some red peppers and some green peppers and chop them all together and there a nice mojito and a little bit of salt

I read one in Bon Appetit years ago that's pretty good. Mix ketchup and some red wine vinegar and ground cumin together. It really is good!

garlic mayonnaise- mix mayo, chopped garlic & a bit of garlic salt together and warm up a bit (don't boil it or anyting, but it's better if it''s not cold)

or add lemon juice to this mixture for aioli (fancy)
