But fail to find even bits of pottery shards or bones from their millions of white-shinned descendants that roamed Mexico thru Canada?

What are you talking about?
"Evidence"? I love the quotation marks. What are you waiting for? Maybe if they found a broken steel bow, sitting on top of a sandal with "Nephi" carved into the side, with a tent pole that says "Property of Lehi" and a stone tablet with the first three chapters of 1 Nephi carved into it, then you might believe? C'mon. The evidence for Lehi's trek is pretty good.
And the same thing goes for America. What exactly are you expecting them to find? A pottery shard that says "Made in Zarahemla"? What exactly would it say?
Somehow I think that even if they did find such a pottery shard, you wouldn't change your tune.
We simply don't know how widespread Nephites and Lamanites were. We don't know how many break-off kingdoms there were. We don't know these things because the Book of Mormon doesn't say it. It's not "Nephite Culture 101". But it is true. And I think you know it.

There is no evidence. That would be why. Remember that an atheist archaeologist will use the Bible as an authoritative work on describing what is going on in a certain area.
The same can not be said for the Mormon archaeologists! Not even a Mormon archaeologist will use the BOM to find things in North America.
The places mentioned in the BOM are not found in real life - not their coinage, language or anything else.

My dad who is still a Mormon, claims that the evidence is the inca and myan temples and I know he has read the book of Mormons a couple of times and went on a mission trip to Hawii, also the bible claims the tongons were the people in the book of Mormon, and I read that book three times and remember it saying the nation was spread all over North and south America, but all they can find for ruins is Inca and Myan temples???

How do you know nothing like that was ever found? There are many arifacts in museums in Mexico and other places, that seem to support the Book of Mormon. LDS scholars seem to agree tat the Book of Mormon was mostly done in what is now Central America.

Um...there are mountains of pottery shards and bones discovered throughout mezo-America from many different ancient civilizations. How about the mysterious Mayan civilization for starters... How'd you miss all THAT evidence???
